There really has not been much going on in my house tonight.  There were no dinner plans, so I scrounged around in the kitchen to cook something up.

I decided to make a Veggie Burger with baked sweet potato slices.  This was really my first time experimenting with making a veggie burger without following a recipe…there are some changes that I’d want to make for next time!

This is what went into the Veggie Burger:  

  • white beans (left over from lunch yesterday)
  • green bell pepper
  • carrots
  • garlic
  • smoked paprika
  • chili powder
  • salt
  • oatmeal

At least that is all I can think of off the top of my head!  I made this recipe just for one, but I think using part of an egg would probably help to bind the burger together and be less “soft”.

I love Veggie Burgers.  I’m excited to make one again so I can play with different types of flavors.  I topped my burger with half Guacamole and half Fresh Salsa.

I also munched on some tortilla chips with guacamole & fresh salsa.  Love both of those…perfect for the summer too!  Overall, this was a great dinner!

Now I am just relaxing the rest of the night…maybe I’ll watch a movie!  

I have taken yesterday and today off of running and I plan to take tomorrow off as well.  My body was tired and I was not giving myself the proper rest.  I will get back into the groove of things on Tuesday, hopefully nice and refreshed!  I probably will make myself a schedule so I’m sure to give myself the right amount of rest!  Today I took off completely, but tomorrow I will be going to Bikram Yoga in the A.M.  I’m really excited for that and I’m hoping the teacher keeps the door closed this time! 🙂

Today I also sat down to think about my plans for running next year.  Last year I qualified for Boston in the Philadelphia Marathon.  I REALLY want to run in the Philly Marathon again since that marathon really means a lot to me–considering it was my first marathon, I BQ’ed, and I live there.  I was having second thoughts on whether or not I could handle completing two marathons in one year.  I know people do it all of the time, but it’s just a little scary.  I won’t have much of a break between training for the two marathons…but then again, I won’t be starting at square one when I train for Boston.  I’m thinking it something I just have to do… 🙂

SUNday.

Today I spent a lot of time trying to organize my room.  I definitely accomplished a lot.  Everything looks much, much neater!

My sister brought home grapes, so now I am on grape overload AGAIN!

After cleaning for a while, I wanted to get outside to enjoy the nice day.  I asked my mom if she wanted to walk my dog, Andie, with me.  She agreed!  So we strolled around the neighborhood for a little bit and probably walked a little less than 2 miles.  I’m glad that my mom came for a walk!  She has been trying to exercise more but she seems to have a hard time fitting it in/motivating herself.  Going on simple, enjoyable walks is an easy way for her to enjoy and fit in her exercise!  

After our walk, I had a little snack.  Since Chobani was kind enough to send me samples of my favorite Yogurt, I had a delicious yogurt!

I had only ever had Chobani’s Vanilla and Plain flavors.  I am a huge fan and have one almost every day!  Today I tried the Strawberry flavor for the first time.

This yogurt has Fruit on the Bottom, so you have to stir before you eat!  The fruit on the bottom had chunks of real strawberries and was not “syrupy”.  I topped mine with some banana slices and Kashi GoLean(not pictured).

The verdict:  I really, really enjoyed Strawberry Chobani Greek Yogurt.  Click the link to read the nutrition facts.  If I am going to eat Strawberry yogurt, I will be eating Chobani!  But I’m not sure if Strawberry will take over my love for Plain and Vanilla yogurt!

I finished off the remainder of my banana with NATURALLY MORE PEANUT BUTTER!  I am addicted to that stuff.  Really, if you have never tried it…go buy some right now.  I just love the crunchiness it has from the flax seeds.  So tasty.

STUFFED.

Last night, my sister, Todd, and I went out to dinner in Manayunk.  We went to Le Bus.  I love this place!!  We started off with 2 baskets of their delicious bread.  Then we ordered the Hummus appetizer to share.  

DSCN0557This came with roasted peppers, grilled zucchini, yellow squash, feta cheese, eggplant salad, olives, and multigrain flat bread.  Delicious!  Everything with delicious minus the olives…yuck.

For my entree, I ordered the char grilled salmon filet, marinated with lime, garlic, shallots, & olive oil then topped with fresh tomato-lime salsa.  This was served with wild rice pilaf (which I wasn’t so crazy about) and broccoli.

The salmon was very good.  I ate everything except most of the rice!  I wish there was more broccoli!  I also had a couple bites of my sisters pasta meal.  

Afterwards, we walked across the street to Saxby’s Coffee.  I got a Green Tea.  Saxby’s now makes their own frozen yogurt in their shop.  After being offered a sample, I could not resist it…I had to buy one!  It was not a specific flavor…it was called their Original Fro Yo.  It was SO good!  This was the best fro yo I’ve had ever.  It had a tangy taste to it.  I ordered mine with fresh blueberries.  It was SO good!  It seems that Frozen Yogurt is the new thing in Philadelphia.  There is talk of a few different frozen yogurt places opening up.  I’m not complaining…I love Fro Yo!!!

This morning…I think I may have eaten a little too much!  I am SO STUFFED.  I made myself a huge bowl of oatmeal!  This bowl contained Oatmeal, Kashi Pilaf, jersey strawberries, raspberries, a banana, cherries, a peach, milk, cinnamon, and a drizzle of honey.

So GOOD!  I bought Georgia Peaches at Whole Foods…they were on sale for .99/lb.  I wasn’t sure if they’d be good or not…but they were awesome!  So tasty…best peaches I’ve had this season so far.  Peaches are one of my favorite mix-in’s for oatmeal.  I’m excited for jersey peaches to come out!

I also had two slices of Banana Bread with Naturally More Peanut Butter and a mini-bowl of Frosted Mini-Wheats.  Oops!  Just a little bit stuffed.  

That Naturally More Peanut Butter is so delicious!  We are already almost out of it…I’ll have to pick up another jar!

Fun.

Today, Bikram Yoga started at 10:30.  This was my second class and my sister joined me this time!  There was a different instructor this time…I’m pretty sure I liked the first instructor better, although today’s instructor was not bad.

I was a little disappointed because the instructor decided to leave the door to the studio opened to the outside.  It was 80 degrees outside, but this made a HUGE difference!  I hardly even sweat compared to my first class on Thursday.  Despite that setback, I had a great time practicing yoga for 90 minutes.  It really was an excellent way to kick off my Saturday.  

Afterwards, at about 12:30, we stopped at Animo Juice for a smoothie!

DSCN0552I decided on one of my favorites…The Chilly Palmer (acai berries, banana, apple, flax seed, and yogurt).  Yummmmy!

After that, we headed home where we met up with Todd.  I brought home Todd a smoothie as well!  Then we made some lunch!  

I made myself a salad of white beans, cucumber, grape tomatoes, avocado, salsa, and salt.

I also had some blue corn tortilla chips with salsa on the side.  I made Todd a similar lunch, but in wrap form.

His wrap contained the same mix minus the salsa.  I also spread hummus on the wrap and added Balsamic Vinegar to the bean/veggie mix.  

Then we went outside and sat by the pool.  I did not feel like swimming but I still laid out and read.  Hopefully I got rid of some of my short tan…but I doubt!  Todd jumped in for a little bit to cool off.  As we sat outside, I munched on a Jazz Apple.

Now we are back in the house, trying to decide what to do tonight!  I just ate a bowl of Jersey strawberries and now I’m munching on some Almonds & Raisins.

Sunny Saturday

Well the weather is FINALLY beautiful…it has been quite cloudy lately!  Last night my family and my boyfriend all went out to dinner in Philadelphia at a restaurant called Table31.  I really was not crazy about going there, but my Mom wanted to try it out because she had heard it was good. 

The restaurant was nothing special and our meals were all just okay.  I wish we had chosen to go somewhere else, but oh well!  We started off with garlic bread and a complimentary chickpea/roasted red pepper/olive oil small dish.  I also ordered a glass of Syrah.  For a starter, my sister and I split the Eggplant Involtini (eggplant filled with taleggio cheese, basil pesto, roasted peppers, fresh tomato).

This actually turned out to be my favorite part of my meal.  It was really good!

Yum.  I had about half of that.  For my entree, I ordered the Chicken Porcini (Exotic Mushrooms, Oven dried tomatoes, grand marsala sauce).  My question is, where were the mushrooms?  There were probably at most FOUR!

It was tasty…but nothing noteworthy.  The wait staff was nice, the prices were very high, and the food was mediocre.  I would not return to this restaurant.

Afterwards, we went for a little walk and ended the night at my favorite Gelato place, Capogiro!  After trying many FREE samples of all different flavors, I decided on two very plain flavors!  Madagascar Bourbon Vanilla and Strawberry! They were so delicious!  I love this place so much.

I am going to Bikram Yoga again this morning.  They don’t recommend eating anything right before class…they say to eat at least 2-3 hours before.  We have about an hour and a 1/2 so I didn’t want to eat too much.  

I had a slice of toasted Cinnamon Ezekiel bread with Naturally More peanut butter and a banana on top.  I finished the rest of the banana by dipping it in peanut butter.

I also had lots of grapes and Jersey strawberries.  Times this bowl by 2 or 3.

mmm…I love fruit!  Now I am off to Bikram!  I hope to get a smoothie afterwards from my favorite place.  Later today, I think I am swimming outside in my pool.  Enjoy your weekend!

I still have more overripe bananas…but I was able to use 4 of them!  Whole Wheat Banana Bread just came out of the oven.  Within 5 minutes of it being out of the oven, I had already ate 3 slices with Naturally More Peanut Butter smeared on.  I think that means that this bread is REALLY, REALLY good!

This is amazing bread.  You will love it.  I had a recipe written down for Whole Wheat Banana Bread from the beginning of the year (not sure where it was from) and I made some minor adjustments and, well, here it is!  

Whole Wheat Banana Bread (Makes 2 Loaves)

4 medium, ripe bananas (mashed)

1 cup Plain non-fat yogurt (I used Stonyfield)

1 egg

3/4 cup brown sugar

1 cup raisins

2 1/2 cups Whole Wheat Flour

1 tsp Baking Soda

1 tsp Salt

1 tsp cinnamon

1 tsp vanilla extract

1/2 tsp nutmeg

Directions:

1)  Preheat oven to 350 degrees.

2) spray loaf pans (8.5 x 4.5 x 2.5)

3) Mix dry ingredients in one bowl and wet ingredients in a separate bowl.  

4) Add wet ingredients to dry ingredients and stir until blended. (Do not over mix)

5) Bake for 50 minutes

6) Cool in pans on wire rack for 5-8 minutes.

7) Remove from pans and cool completely.

Fruit, Fruit, Fruit

Today I woke up around 7:00  and I laid in bed checking email, etc.   My lower back hurts a little bit from all of those yoga moves I did last night.  It hurts in a good way though!  After a little bit, I decided to go down the road to the farmer’s market to pick up some fruit for breakfast.  I was the only one at the market & I picked up pineapple, jersey strawberries, red & green grapes, cherries, and FREE overripe bananas!

Yum.  I am on fruit overload.  I just love it so much.

After cutting up my fruit, I made a bowl of oats!  I’m not sure if anyone has ever tried it, but Kashi sells a product called Pilaf.  It takes a while to cook up…but you can do so much with it!  I recently started to add it to my Oatmeal.  It is a mix of grains: whole oats, whole long grain brown rice, whole rye, whole hard red winter wheat, whole triticale, whole barely, whole buckwheat, & whole sesame seeds.  

I told my sister about it and now she enjoys doing it as well.  She cooked them up last night so we could have them this morning.  They actually sell a microwavable pouch of Pilaf that only takes 60 seconds.  I used that a lot when I was at school.  Very quick and convenient.  

So this morning’s oatmeal mix included: Oats, Kashi Pilaf, Cinnamon, Jersey Strawberries, Pineapple, Cherries, and a Banana.

I was SLIGHTLY disappointed with how my oats came out this morning.  They were a little on the watery side and I wasn’t able to add milk!  I enjoy my oats more on the thicker side.  I have not made my oats with pilaf in a while and I forgot that the pilaf does not really absorb much water…so you have to use less water!  Oh well…at least I’ll remember for tomorrow!

The Pilaf gives the oats more of a chew factor.  You should try it sometime!
