Tonight’s dinner was one of my favorites.  The only thing that would have made it better was if I made the spaghetti myself.  That’s always fun and definitely delicious.

Whole Wheat Spaghetti, Broccoli, Spinach, & Turkey Meatballs in Tomato Sauce

Whole Wheat Spaghetti, Broccoli, Spinach, & Turkey Meatballs in Tomato Sauce topped with parm. cheese

My Favorite Tomato Sauce

1 big can of Whole Peeled San Marzano Tomatoes

1 small can of Tomato Paste

water

Salt & Pepper

Garlic

Dried Basil & Parsley

Fresh Basil

Olive Oil

Saute a small amount of olive oil and garlic over medium heat in a big pot.  Be careful not to burn the garlic!!  After the garlic has had a chance to saute, add the can of Whole Peeled San Marzano Tomatoes and break the tomatoes up with your hands or a wooden spoon.  I like to leave some of the tomatoes chunky, but that’s just my preference.  After the tomatoes are mostly broken up, add the can of Tomato Paste, half of a big can of water,  dried basil, dried parsley, salt, pepper and fresh basil.  Use your judgement with the amounts that you put in.  I like to rip some of the fresh basil up and toss it in & I also throw some whole leaves of basil in the pot.  Bring up to a boil and then let simmer for as long as you can!

There you have it.  My favorite tomato sauce ever.

Turkey meatballs are also delicious.  I actually can’t remember the last time I had a regular beef meatball.  I tend to make either chicken or turkey meatballs.  They are much healthier for you and I think that they taste better too.  Lots of people fry their meatballs, but this version is baked…making them even healthier for you.

Turkey Meatballs

1 package of ground turkey breast (it is important that you buy ground turkey BREAST, this is all white meat.  They also sell ground turkey, which is a mix of dark and white meat)

salt & pepper

dried basil & parsley

1 egg or 1 egg white

1-2 small handfuls breadcrumbs (I use Whole Grain Bread Crumbs)

1-2 small handfuls Grated Parmigiano Reggiano Cheese

few cloves of minced garlic

milk

Place the ground turkey in a big bowl.  Add the egg, breadcrumbs, cheese, salt, pepper, garlic, dried basil & parsley.  Mix together with your hands.  Add a little bit of milk.  Be sure not to overmix the turkey mixture!  If the mixture is too wet, add more breadcrumbs…if it is too dry, add more milk.  Form into balls.  Preheat oven to 400 degrees.  Place on a baking sheet that has been sprayed with PAM.  Drizzle a little olive oil over meatballs.  Bake for about 20 minutes, turning the meatballs over about 1/2 way through cooking.  Enjoy!

Dinner was also served with an amazing loaf of bread that I picked up from Whole Foods today, Organic Multiseed Batard.  Next time you’re at Whole Foods, look for it and pick it up!  So amazing.

The ingredients list: water, organic wheat flour, organic whole wheat flour, organic rye flour, organic sunflower seeds, organic sesame seeds, organic rolled oats, organic pumpkin seeds, organic flax seed, sea salt, yeast, organic dough conditioner (organic wheat flour, enzymes, ascorbic acid)

HELLO!  It’s been a few days.  I’ve been really busy and had no time to update the blog.  I think it’s going to become a little bit harder to update as frequently because I’m going to be very busy with school & everything else.  But I’ll try!

Lots of good food has been consumed over this past weekend.

Friday night & met Todd for gelato at Capogiro!  So good.  Here I am enjoying Cappuccino & Fior Di Latte (Milk gelato).

It’s really good.  I love getting this combination of flavors.

Saturday morning, I ran my long run…17 miles.  I thought about it and I haven’t ran this far since the marathon last November.  Crazy.  My run went great though.  There were so many runners & bikers out in the morning so it was cool getting to run around with everyone.  There were points in the run where I was definitely feeling pretty tired, but I was able to power through and motivate myself.  Overall, great run.  I averaged around a 7:50/mile pace which I’m so happy about.

After the run, my legs were feeling pretty tired and so was my body.  After eating & doing work, I ended up snoozin’ for a couple of hours.  It felt great to get some rest.

Saturday was my parents 29th Anniversary & they invited me along to share in their celebration.  haha.  How nice.  We went to a really nice restaurant at the Four Seasons Hotel called The Fountain.

Here are my parents when we first sat down at the table.

I started off with a glass of red wine and then we later ordered a bottle of white wine that I had some of too.

A server came around with a basket of assorted breads and we had our pick of which one we wanted.  I chose the Multigrain Roll.

Really good.  When he came around again, I tried out a crisper flat bread type thing.  Also very good.

This restaurant was neat because in between different parts of our meal they had a special complimentary small bite from the chef.  The first thing they brought out was a crab salad on a crispy baguette.

This was so good!  I love crab and there was a piece of cilantro on it that made it very flavorful.

To start off my meal, I ordered a salad with a shallot vinaigrette dressing.

Although this looks really plain, the dressing was great and I loved this.  My parents both ordered the Lobster Bisque.

For my entree, I ordered a white flaky fish in which I never heard of, Atlantic Dorade.

DSCN1729This came with delicious Heirloom Tomatoes and about 4 Gnocchis (haha).  So good though!  Loved this meal.

My parents were on a Lobster kick and ordered the same entree too!!

This was poached Lobster with Fava Beans & Beets.  Do you see that round thing in the middle of the plate?  Well, I’m not quite sure what that was but I know it involved some Truffled Potatoes.  It appeared to be breaded on the outside.  I don’t know what it was, but let me tell you, it was AWESOME.  My mom was full so I ate half of hers and helped her finish off her Lobstah!  SO GOOD!!!

Now, it’s dessert time.  Before our dessert came out, we got another complimentary dish from the chef.

DSCN1733This.was.amazing.  I wish I could eat this everyday.  It was some sort of Espresso mousse/pudding?  Not quite sure. Topped with Whipped Cream & what I thought was an M&M type thing until I ate it.  It turned out to be a chocolate covered espresso bean…makes sense right?  I never had one of these but it was pretty good. It was kind of strong so I definitely wouldn’t be snacking on these by the handful.  I hate coffee too.  I finished off mine and then helped my mom with hers.  haha.

For REAL dessert, I ordered homemade Blueberry Yogurt & Vanilla Ice Cream topped with berries & a sugar cookie.

This was the best!  haha I think I loved everything tonight.  The blueberry yogurt was definitely my favorite part of this dessert.  It was so fresh and flavorful, tasted just like blueberries.

On the menu, they had Sweet Corn Ice Cream.  Sounds weird and gross right?  Well we were talking to the waiter about it and he said that we would be really surprised so he brought us out some samples.  Let me tell you, it works!  It was the strangest thing in the world but I think I enjoyed it?  I probably wouldn’t want a huge bowl of it but it was surprisingly good!

Think our dinner was over?  Think again.  MORE FOOD!  They brought us over a tray of chocolates/candies.

DSCN1737We had already eaten some of them.  There was Chocolate Coconut things that I didn’t eat because I don’t like coconut.  Then there was these Peach Jelly things which were awesome and dark chocolate truffles which were also great!

We had a great time and enjoyed some excellent food.  After dinner, my parents dropped me off to meet up with a bunch of my friends at a bar near my apartment.  I spent a couple of hours there & then I headed back home because I was so tired.

Today I went with Todd to the Eagles Game! (I hope that’s green, I’m color blind if you didn’t know haha)  It was a great game and the rain held off on us.  Most importantly, the Eagles dominated!  We had such a fun time.  We had club box seats and they had some pretty cool food.  I got some chicken quesadillas with guacamole & chips.  They weren’t too bad.

Tonight I went to Whole Foods to pick up a few things I needed and I also had dinner there with Todd.  I had a bowl of Minestrone Soup with a Prairie Roll.

Yum!  This was perfect.  For dessert, I got a bowl of Vegan Rice Pudding with Raisins.  I’m sorry to say that I did not take a picture.  It was very, very good though! 🙂

I have a busy week ahead of me and I still have some things to do tonight so I’m going to get some things done.  I wish we still had another day of the weekend.  Two days is just too short!

New Shoes.

This morning I did a 7 mile run.  I was experiencing technical difficulties with my Garmin, so I really do not know the pace since it said my first mile was ran at an 18:37 per mile!  I don’t know what was going on but I hope it doesn’t happen next time I go to use it.  I depend on this thing so much!  Anyway, my run was just okay.  I wore my new shoes & I experienced some pain on the balls of both of my feet…kind of like my foot repeatedly was hitting a hard surface.  Not to sure what that was about.  I decided to wear my shoes the rest of the day…maybe I just need to break them in?  Anyone ever experience something like this?

I made a Green Monster again today.

My Green Monster contained:

  • 1 Cup Unsweetened Vanilla Almond Milk
  • ~3 handfuls of Baby Spinach
  • 1 big scoop Naturally More Peanut Butter
  • 1 Frozen Banana
  • Ice Cubes

Today I also ventured over to Whole Foods.  I picked up some things to have on hand for dinner.  Tomorrow I hope to cook up some Split Pea Soup, Vegetarian Black Bean Soup, and possibly Black Bean Burgers so I can freeze them all for easy eating.  While I was at Whole Foods, I was going to buy some Chia Seeds to try out…but they were 20 dollars!!!!!  I really want to try them out after seeing Tay use them. So I’ll have to keep looking to find them cheaper!

For lunch, I decided to have breakfast!  I had a bowl of Banana-Date Overnight Oats.

Delicious!  In the mix:

  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 1 Tablespoon Flax Seed
  • 1/2 cup Oatmeal
  • 1/4 cup Oikos Plain Yogurt
  • Cinnamon
  • Banana
  • 4 chopped dates

I think that’s all!

Now I am about to go do some reading & cut up an apple with some tea and chocolate or something!  Aren’t I really cool?  Then I have class tonight.  After class, I plan to make my sister and I dinner!  You will just have to wait and see what is on the menu tonight! haha.

Last night, Christina and I went over to our local Fleet Feet running store for the first Wednesday night group run.  They were handing out free socks & water bottles…how can you say no?  We did a short 3 mile run but it was neat to run with a lot of people.  We met a bunch of nice people & I’m glad we decided to go!!! woo woo!

Afterwards, we hit up Whole Foods for din din & some food shopping for a few things!  We were both pretty happy about that & ended up getting the same thing to eat.  We both filled up on Vegan Lentil Soup and Seeduction Bread.

Absolutely, the best bread ever.  I really can’t get enough of it.  SO delicious.

We then snacked on some Sundrops from the bulk section.  I love those things.

When we got home, it looked as if my parents had a long day at work.  It was about 8:30 and they were discussing what to do about dinner.  They were going to grab something out but instead I offered to make them some dinner since we had so much fresh food in the fridge.  My mom ended up helping a little but I’m glad I helped her out because she looked pretty beat!

I made them some baked sliced sweet potatoes, sauteed string beans with garlic, & BBQ chicken.  They seemed to really enjoy it!  The sweet potatoes came out really good too…I MAY have stolen a few! 🙂

I snacked on some watermelon and grapes the rest of the night.  I also spent some time applying for my teaching certificate in New Jersey.  I went to school in Pennsylvania and I have my certificate there, but now I have to apply to get it in New Jersey too!  It’s a pain in the butt…PA definitely has a much, much easier process than NJ.  But I got most of that out of the way now so it feels great!

This morning, I went to my sister’s Spin class.  Before her class, I made a Green Monster…it’s been a while!  I also ate lots of blueberries, watermelon, and grapes!  I just LOVE fruit.  Speaking of Green Monsters, I just frozen lots and lots of very ripe bananas so I can enjoy many, many Green Monsters!

Christina’s class was great today!  She did a great job last week but I think she did even better this week!  I really enjoy going to her class.  It’s a good workout and a nice change of pace from running.  Also, it’s a lot of fun!  Woo Hoo, go Tina! 🙂

This morning/afternoon I had a couple of errands to run including food shopping…my favorite!  I had to buy a bunch of stuff for this weekend because I am having some visitors!  I am having about 5 or 6 of my friends that I just graduated with over on Saturday & Sunday.  I’m really excited to see everyone since it’s been a while!  I am used to seeing them everyday when I am at school.  I got some good food for us too.  I plan to make guacamole & black bean & corn dip.  I also bought watermelon, stuff for sandwiches to bring to the beach, turkey burgers, broccoli, chips, and some other goodies.  Should be a fun, fun time!!

When I got home from food shopping, I unpacked everything and organized the kitchen a bit.  Then I had lunch with my sister.  We decided to make the same lunch I had earlier this week…my favorite salad combination with crackers & hummus.

The salad consisted of a bed of baby spinach, homemade candied pecans, feta cheese, chopped golden delicious apple, & strawberries, all dressed in EVOO/Balsalmic Vinegar/salt & pepper.

Love it.  I think I got my servings of baby spinach today!

I made my own “crackers” today from the flat out wraps again.

You just take a flat out wrap, brush it lightly with olive oil and sprinkle kosher salt.  Then you bake in a 375 degree oven until browned.  Simple as pie and delicious!

I ate the crackers with the hummus that I made earlier in the week and I tried out one of the new flavors I bought today…red pepper hummus.

Great lunch.

Tonight at 6:15 I am going to Vinyasa Yoga.  I’m really excited since I haven’t had a chance to do yoga in a couple of days!  For dinner, I am trying out a carrot soup.  It sounds really delicious and I love carrots.  I also love pureed soups!  Very excited to make it and try it out!
