Serves 8.
3/4 cup low-sodium soy sauce
1/4 cup honey
1/4 cup pineapple juice
1/4 cup fresh lime juice
1 1/2 Tbl. grated peeled fresh ginger
1 Tbl. Olive Oil
2 tsp. minced garlic
1/4 tsp. five-spice powder
1/2 tsp. ground black pepper
2 lbs. pork tenderloin
Chopped Fresh Pineapple
Combine first 9 ingredients in large zip-lock bag and add the pork. Seal bag and marinate for an hour in the refrigerator, turning occasionally.
Remove pork and reserve about 1/2 cup of marinade. Place in a roasting pan with the reserved marinade and chopped pineapple. Roast in the oven.
